As summer heats up, nothing beats a tasty frozen treat to help you cool down. If you want to enjoy a dessert that combines the beloved flavors of a classic s'more with a refreshing twist, look no further than these frozen s'mores bars!
These bars are not just easy to prepare but require no baking, making them a go-to choice for busy parents and anyone who craves a quick, beloved dessert. With just a few simple ingredients, you can whip up these delicious bars for your next gathering or as a delightful after-dinner surprise.
Ingredients You'll Need for Quick Frozen S'mores Bars
Gather the following ingredients for this delicious treat:
1 (5.9-ounce) box instant chocolate pudding
2 ½ cups whole milk
2 ½ cups Cool Whip, defrosted and divided
12 graham crackers, broken in half and divided
5 ounces cream cheese, softened to room temperature
7 ounces marshmallow crème
Pinch of salt
Preparing the Dish
First, prepare your baking dish for easy layering. Line a 9x13-inch baking dish with parchment paper, allowing a little extra paper to hang over the sides. This small step will help you lift the bars out effortlessly once they are frozen.
With your dish ready, you can move on to the fun part.
Making the Chocolate Layer
In a medium bowl, whisk together the chocolate pudding mix, whole milk, and ½ cup of Cool Whip until everything is smooth and creamy.
Next, spread half of the graham crackers evenly over the bottom of the prepared baking dish. Pour the pudding mix over the crackers, smoothing it down. Place the dish in the refrigerator while you prepare the next layer.
Crafting the Cream Cheese Layer
In another medium bowl, combine the softened cream cheese and marshmallow crème. Beat them together until the mixture is smooth.
Gently fold in the remaining 2 cups of Cool Whip and a pinch of salt. This fluffy cream cheese layer perfectly complements the rich chocolate pudding below.
Spread this light mixture evenly over the chocolate layer in your dish, then top with the remaining graham crackers to finish assembling your bars.
Freezing the Bars
Once you've added all the layers, cover the baking dish tightly with aluminum foil. It’s freezing time! Allow the bars to freeze for at least 6 hours. The longer you freeze them, the firmer they will become, which is key for cutting them into perfect squares.
Serving the Frozen S'mores Bars
When ready, lift the edges of the parchment paper to pull the entire block of bars out of the dish. Place it on a cutting board and use the graham crackers as a guide to slice into 12 squares. If there’s any excess frozen filling, trim it away for neat edges.

You can enjoy these bars straight away while they are slightly softened or store them in a zip-top freezer bag for later. If you freeze them, let them sit at room temperature for about 15 minutes before serving. This will help them reach the perfect soft texture.
